Why Nutrient Absorption Matters

Foods That May Influence Nutrient Absorption

 

Some foods naturally contain compounds that can reduce the absorption of certain vitamins and minerals. These compounds—often referred to as anti-nutrients—are a normal part of many plant foods and do not necessarily make those foods unhealthy. Their overall impact depends on the quantity consumed, food preparation, meal composition, and the rest of the diet.

Coffee and Tea

 

Coffee and tea contain naturally occurring compounds that may reduce the absorption of certain minerals when consumed alongside meals. When practical, consider leaving approximately 1–2 hours between coffee or tea and mineral-rich meals.

Foods Naturally High in Phytates

 

Foods such as nuts, seeds, legumes, and some whole grains contain phytates, which may reduce the absorption of minerals such as iron, zinc, calcium, and magnesium.

Foods Naturally High in Oxalates

 

Some vegetables—including spinach, Swiss chard, and beet greens—contain oxalates that may reduce calcium absorption and increase oxalate intake in susceptible individuals.

These foods can still form part of a healthy diet, but variety and appropriate meal planning are important.

Practical Ways to Maximise Nutrient Absorption

 

Simple habits may help improve the nutritional value of your meals:

  • Consider separating coffee and tea from mineral-rich meals whenever practical.

  • When aiming to maximise mineral intake, consuming nutrient-dense foods—such as seafood—without many competing foods may be beneficial.

  • Vary your food choices rather than relying heavily on the same foods every day.

  • Prepare foods appropriately. Depending on the food, cooking, soaking, or fermentation may improve nutrient availability.

  • Aim for a varied, nutrient-dense diet rather than focusing on individual "superfoods."

 

Perfect meals are not necessary. Consistent dietary habits generally have a far greater influence on long-term nutritional status than occasional meals.

Other Factors That Influence Nutrient Absorption

 

Food is only one part of the picture.

Several other factors may influence how efficiently nutrients are absorbed and utilised, including:

  • Digestive health

  • The intestinal microbiome

  • Previous gastrointestinal illness or surgery

  • Certain medications

  • Recent antibiotic use

  • Excessive alcohol consumption

  • Chronic digestive conditions

 

For example, antibiotics may temporarily alter the balance of the intestinal microbiome, while some medications can affect stomach acidity or interfere with the absorption of specific vitamins and minerals.
